I seem to endlessly pin recipes on Pinterest – but today decided to conquer the easiest one of all: Baked Avocados with homemade salsa. Unfortunately the pin didn’t seem to link to any vague sense of recipe…. so I just had to make it up!
These were insanely easy to make and super speedy. Mama Wood gobbled hers up in no time.
One avocado per person (or more if you’re feeling particularly peckish)
A handful of grated parmesan
A handful of breadcrumbs
For the homemade salsa (for two people) I used:
about 7 vine ripened tomatoes
half a red onion
three red chillies (I like my salsa with a kick)
Plenty of pepper and a smidgen of salt
Method: Chop everything up. Mix it together. Doneso.
You then need to get that big ol’ stone out of your avocado to make space for your salsa. Once you’ve got that badboy out, ladle your salsa onto each half of your avocado like your life depended on it. Pile it up as high as you can!
The final step involves chucking (sorry, sprinkling) some grated parmesan and breadcrumbs on top. Voila.
Pop them in the oven (at about 180 degrees) on a baking tray for approx 15 minutes to get them nice and hot. I followed this with a cheeky grill for a couple of minutes to get the top nice and brown.
I served them up with some beetroot and pittas for scooping/dipping/smushing.
